Servings: 4 pastries
Prep Time: 10 minutes
Bake Time: 15–18 minutes
Total Time: ~30 minutes
INGREDIENTS
1 fresh peach, thinly sliced
A few fresh blueberries
1 sheet premade refrigerated puff pastry dough (thawed if frozen)
3–4 tbsp whipped cream cheese
½ tsp vanilla extract
1 egg (for egg wash)
2–3 tsp granulated sugar
1–2 tsp honey
Powdered sugar, for dusting
INSTRUCTIONS
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Prepare puff pastry:
Roll out the puff pastry slightly and cut into 4 equal rectangles.
Lightly score a border about ½ inch from the edges (don’t cut all the way through).
3. Mix filling:
In a small bowl, stir together whipped cream cheese and vanilla extract.
Spread evenly inside the scored area of each pastry.
4. Arrange fruit:
Layer peach slices neatly over the cream cheese.
Scatter blueberries on top.
Sprinkle granulated sugar evenly over the fruit. Drizzle with honey.
5. Egg wash: Beat the egg in a small bowl. Brush the edges of each pastry with the egg wash for a golden finish.
6. Bake for 15–18 minutes, or until puffed and golden brown.
7. Finish & serve:
Allow pastries to cool for 5 minutes.
Dust generously with powdered sugar.
Serve warm, ideally with a cappuccino.
