Bougie Grubs Rustic Ranch Chicken and Bacon Soup

One-Step Crockpot Recipe

1 cup shredded cooked chicken
1/2 cup crumbled cooked bacon
2 russet potatoes, diced
1 onion, chopped
4 oz cream cheese
2 cloves garlic, minced
2 teaspoons black pepper
1 packet dry ranch dressing mix
2 cups chopped kale
8 cups chicken broth
1 cup heavy cream

  1. Prepare the Ingredients. Dice the russet potatoes, chop the onion, and mince the garlic cloves.
  2. Combine All Ingredients in Crockpot. In the crockpot, combine the diced potatoes, chopped onion, minced garlic, shredded chicken, crumbled bacon, cream cheese (cut into chunks), black pepper, dry ranch dressing mix, chopped kale, chicken broth, and heavy cream.
  3. Stir Well. Gently stir all the ingredients together to ensure they are evenly mixed.
  4. Cook the Soup. Set your crockpot to low and cook for 6-7 hours. The soup is ready when the potatoes are tender, and the flavors have melded together nicely.
  5. Check and Adjust. Before serving, check the soup. If the cream cheese hasn't fully melted into the soup, give it a good stir to incorporate.
  6. Serve and Enjoy. Ladle the hot soup into bowls. If desired, you can garnish with extra bacon crumbles, fresh herbs, or a sprinkle of cheese.

This simplified version of Rustic Ranch Chicken and Bacon Soup is perfect for those busy days when you want to throw everything in the crockpot and return to a delicious, home-cooked meal!
